Squash Soup
Zucchini or Summer Squash Bread
Chicken / Zucchini Casserole

Squash Soup

Ingredients
1 medium sized butternut squash (peeled and cubed Ð about 2 cups)
1 medium onion, chopped
4 cups chicken broth
1/2 tsp each dry sage * Thyme
2 tbs butter or margerine Ê

SautŽ the onions in the butter 'til Transparent
Add squash and sautŽ the mixture 'til soft, about 10 minutes
Add the seasonings and sautŽ for 1 more minute.
Add chicken broth, bring the mixture to a boil, and then simmer for 30 minutes.
Transfer to food processor to liquify

Top each serving with eithercroutons, pine nuts or even blue cheese


 
Zucchini or Summer Squash  Bread

2 Cups GRATED UNPEELED  ZUCCHINI	
2 1/2 Cups SUGAR	
3 Eggs
1 Cup  VEGETABLE   OIL	
1 TSP VANILLA	

3 Cups  SIFTED FLOUR	
1/2  TSP  SALT	
2 Pinchs   CINAMON	
2 TSP  BAKING POWDER	
1 Cup   CHOPPED WALNUTS				

MIX FIRST FIVE INGREDIENTS	
SIFT IN REMAINING DRY INGREDIENTS	
ADD WALNUTS		
BAKE AT 350 o FOR 1 HOUR, 10 MINS.		

MAKES 2 LOAVES	



 ZUCCHINI CHICKEN CASSEROLE
	
2 LB ZUCCHINI      1 Lge or 3 Med or 5 sml
     WASH, DON'T PEEL, SLICE THIN	BOIL 5 MINUTES With
1 SM SLICED ONION	       
IN A BOWL	
MIX 1 CAN CREAM OF CHICKEN SOUP	
WITH 1 CUP SOUR CREAM	
ADD DRAINED ZUCCHINI AND ONIONS		
MELT 4 TBS BUTTER IN SKILLET	
ADD 8 OZ BELL'S POULTRY BREAD CRUMBS			
USE 1/2 THE BREADCRUMBS TO COVER BOTTOM OF RECTANGULAR BAKING DISH		
SPOON IN ZUCCHINI MIXTURE		
TOP WITH REMAINING CRUMBS		
BAKE AT 350 o FOR 30 MINUTES
